Bacon Wrapped Scallops
Ingredients
- 1 doz. Fresh scallops 6 slices streaky bacon
- 1 TBSP brown sugar
- Marinate
- Marinate
- 1 TBSP olive oil
- Juice of a ½ of lemon (approximately 2 TBSP)1 clove garlic, minced
- 1TBSP finely chopped fresh chives
- 1/4 tsp Greek One Spice®
Combine all ingredients of your marinate in a small bowl, whisk well. Put scallops in marinate and refrigerate for one hour. Cut bacon in half crosswise. Wrap each scallop in a piece of bacon, and secure with a wooden pick. Arrange scallops on a rack in a broiler pan, sprinkle brown sugar on top of each scallop. Broil 6 inches from heat 10 to 15 minutes or until scallops are opaque and bacon is done, turning occasionally. Serve hot. (Appetizer for two) Note: Brown sugar is optional, tastes great with or without sugar.
