Frittata


 6 eggs, divided
1 1/2 cup grated cheese (cheddar or colby) 

1/2 cup chopped spring onion raw or minced onion raw or fried onion
1 cup shredded zuchinni (or omit)
1/2 cup cooked potatoes, boiled or any leftover potato from dinner
1/2 cup cooked chicken, beef, lamb or pork
1 tsp Garlic and Chives One Spice
1 tsp Greek One Spice
 
 
Beat 4 eggs add One Spice.  Put all ingredients into the bowl and mix well, save 1/2 cup of cheese for the topping.  Pour into a pie dish or any casserole dish.  Bake in preheated oven at 180C for 10 minutes Separate 2 eggs, whisk eggs whites till peak, beat yolk, and fold in together.  Remove Frittata from oven and add the egg white, egg yolk mixture, top with the rest of the cheese and bake another 20 minutes or until the cheese is golden brown. 

 
Eat it hot or once cool eat it cold
