Gyros 

Ingredients:

Directions: BBQ or grill lamb chops or warm last night’s lamb roast (chicken, pork or beef can be substituted).  Light cook bread in a nonstick frying pan until warm on both sides.  Assemble the remaining ingredients and fold sides and top with cucumber dip.  Wrap in aluminum foil to keep it held together for serving.

 Note: When cooking lamb, rub with olive oil and lemon juice and season with Greek One Spice®

Bread Machine Whole Wheat Pitas

Preheat oven 200°c (400° f) with lightly oiled (cookie) sheet pan inside oven – without baking paper (if you have a hot stone, use it).

 Ingredients 

  • 1¼ cups room temperature water
  • 2 tablespoons oil
  • 1 teaspoon sugar or 1 Tablespoon honey
  • 1 teaspoons Greek One Spice + ½ teaspoons salt
  • 3 cups Plain all-purpose flour or whole wheat
  • 1 packet or 2 teaspoons yeast

Add  ingredients in in order of list.  When bread machine finishes, remove dough, separate into 8 pieces roll into balls, place a damp tea towel on top of the dough balls, rest 20-30 minutes.  Roll out flat into circles, place on to your hot pan in oven and bake 5 minutes (can also be reheated on grill to get the nice marks, or frying pan).

Dough by hand

Put flour in a large bowl.  Put the yeast in warm water, wait until it froths then add the salt, Greek One Spice and sugar to water.  If using honey, melt and cool first then add to yeast water.  Make a hole in the center of flour.  Pour the water into the center a little at a time and begin to pull the flour towards to center.  As the dough starts to get sticky, slowly add the oil.  Continue this process until you have formed a ball.  Now begin to knead by pulling and stretching the dough and folding it back onto itself until you have a smooth dough ball.  Rest in an oiled bowl, cover with damp tea towel until it doubles in size.  Then separate into dough balls.
