Keto Cheese and Pita Chips

 Preheat oven to 180◦

 Cheese mix

 Ingredients:

1 225g package cream cheese, softened

1 1/2 cups  shredded Swiss cheese

1/3  cup mayonnaise – I use Best

1 sliced green onion

¼ cup  sliced almonds, toasted in frying pan until slightly brown ( roast ½ cup do not burn or will have a bitter taste)

¼  teaspoon pepper

¼ teaspoon fresh or ground nutmeg – I use fresh from Bin Inn

¼ cup  sliced almonds,  (for top)

 

Instructions:

Beat package of cream cheese until smooth. Stir in Swiss cheese ¼ cup sliced and toasted almonds, mayonnaise, green onion, black pepper and nutmeg. Bake in lightly sprayed baking dish, (I use olive oil) for 15 minutes or until heated through, depending on your oven. Sprinkle ¼ cup of toasted almonds over cheese mix. Serve warm or cold with pita chips.  I like it cold.

Preheat fryer to 190◦

Pita chips - I use Gerry's wraps Go Low Carbs - online or in Countdown

(Macro = no carbs for wraps)

Cut into triangles or whatever shape you like.  I use two wraps – just for me. Deep fry until golden.  Drain, sprinkle with spice mix to coat chips thoroughly - this is the yummy part, I eat these anytime on their own.

If you do not have a deep fryer use a medium pot on the stovetop.  Use oil's such as rice bran, coconut or peanut oil, heated to 190◦

Spice Mix

Ingredients:

  • 3 tsp Fiesta Buy here
  • 2 tsp smoked paprika
