Parsley, Parmesan & Pistacho
Crusted Leg of Lamb
Ingredients:
- Leg of Lamb
- 5 Peeled & Whole Cloves Garlic
- 1 Fresh Lemon
- 3 TBSP Olive Oil
- 1 egg
- 4 tsp Greek One Spice
- 90 Pistachio – removed from shell
- ¼ cup Parmesan (whole not powder)
- ½ cup Parsley
Preheat Oven 180°
Wash lamb leg, pat dry. Insert garlic into meat using a sharp knife slitting deep into meat, insert whole garlic cloves into slits. Squeeze fresh lemon juice all over lamb and into slits. Thinly slice lemons place in pan (eat). Rub oil over lamb. Season entire lamb with Greek One Spice. Whip egg with a splash of water and a dash of Greek One Spice. Using a brush, spread egg wash over entire lamb leg. In a food processor, blitz parsley, parmesan & pistachio. Using hand press mixture over entire Leg of Lamb. Roast in preheated oven 1.5 hours. Rest before carving.
