Quinoa, Rice & Pasta Salad
Combine all ingredients and mix well.
Ingredients
1 cup cooked Quinoa/Rice blend
250 g cooked Wholemeal Penne
2 TBSP chia seeds
½ cup sunflower seeds
¼ cup parsley, chopped
¼ cup kale, chopped
2 TBSP fresh basil, chopped
1 small purple onion, chopped
2 scallions, chopped
1/2 red capsicum, chopped
2 TBSP sundried tomatoes
¼ cup black Greek olives
Fresh cherry tomatoes (optional)
¼ cup (goats) Feta (optional)
Dressing
3 tsp Greek One Spice
1 tsp Greek Lemon One Spice
Juice of ½ of lemon
3-4 TBSP olive oil
2 TBSP Apple Cider Vinegar (Organic Raw with “Mother” unfiltered, Unpasteurised)
3 TBSP salad dressing or mayonnaise (optional)
